My First Pot Roast

I promised myself to cook more this year. While grocery shopping last week, I purchase a pot roast. It was on sale, it sounded yummy, and I figured it would be simple to make. I've been following the Pioneer Woman for over 4 years and remembered she posted a recipe a few months ago. Inspired, I looked up Ree's pot roast recipe and made some alterations. I used beer & water instead of wine & beef stock. Ohhhhhh and I've always dreamed of owning one of these...


I considered purchasing a Le Creuset pot but it was just too pricey. Plus, the lovely yellow color did me in!


Onward to the ingredients!


After searing the veggies and roast, I added the beer & water and spices...



Then, off to the oven it goes and the three hour wait begins... a three hour tour, a three hour tour... sorry, but it did take three hours.


And the wait was well worth it...


I decided to serve it with mashed potatoes and salad...


The boyfriend agreed to the yumminess and went back for more. SUCCESS!
